I started making Spaghetti Squash a few months ago and it was an instant success in our house. We did the traditional spaghetti-style Spaghetti Squash and added marinara sauce and toppings. But I knew we could expand out horizon a bit and try something different.
I cook mostly vegan food in my home but my husbands only request is that I cook him fish at least once per week. So, I thought that was pretty fair. Tonight was the fish night. I fried up some catfish fillets along with a side of potatoes and broccoli. I knew my toddler wouldn’t eat any fish, which I was completely fine with because we are probably the two strictest vegans in the house.
I think the hardest part about being vegan is not having a lot of dessert options. I’ve said it once, and I’ll say it again: I am by no means a hard-core vegan. I have a serious weakness for cookies, cake, pie, just about anything sweet!
