It ain’t quite summer until you’ve made home-made popsicles! Home-Made Blueberry Popsicles at that! This was definitely on my summer bucket list to do with the kids this year. Unfortunately, my mother beat me to it and she made popsicles with my oldest son first. But honestly, I couldn’t believe how simple her recipe was so I had to try it. I did things a little differently of course, but still delicious.
My favorite thing about these popsicles are that they are guilt free! I don’t feel bad about giving my kids these because it has all natural ingredients and they love them. All I hear from my one year old is, “more, more”. And even better, it’s super simple to make. And feel free to modify it to your taste.
I originally made these for the kiddos but feel free to indulge in them yourself.
Let’s Get Started
I started of with a ripe banana, fresh blueberries and a ripe avocado. I used about a cup of blueberries, half of an avocado and one banana.
I blended all of that up in my Bullet. It doesn’t make a whole lot but you can double this easily. For my one year old, I put this in ice cube trays (half full) so that he can eat them independently. This was enough to make a tray and a half of ice cubes. I also made a separate batch for popsicles molds for the rest of the family.
Next, strain the mixter. This will get all of the blueberry skins out of the Blueberry Popsicle’s. The first time I made this, I did not do this step and it turned out fine for me. But if you prefer a smoother texture, then make sure to strain your mixture. It will look like so:
Then fill in the ice cube tray or popsicle mold. This mixture got me a tray and a half of ice cubes. My oldest son prefers his in a popsicle mold.
Let this sit in the freezer for at least 4 hours. Then enjoy your Blueberry Popsicle’s! I can’t make these fast enough for my little ones. I hope you enjoy!
