Kid-Friendly Green Smoothie

I cook mostly vegan food in my home but my husbands only request is that I cook him fish at least once per week.  So, I thought that was pretty fair.  Tonight was the fish night.  I fried up some catfish fillets along with a side of potatoes and broccoli.  I knew my toddler wouldn’t eat any fish, which I was completely fine with because we are probably the two strictest vegans in the house.

But as I was cooking, my boys were running around and I heard *SPLAT* and I look down, and I see my toddler picking himself up off of the kitchen floor.  He was already cranky and sleep and now running.  I check him out and everything was okay except he had bit his tongue.  Poor guy!

I hadn’t thought much of it until it was time to eat and when he tried the potatoes or broccoli, he gave a crazy look and asked for his “cup”.  Then I realized that he wouldn’t be able to eat what I cooked because the seasoning was hurting his tongue, so I whipped him up a smoothie.

Here’s what I threw in there:

  • Spinach
  • Watercress
  • Banana
  • Strawberries
  • Avocado
  • Ice
  • Ground Walnut (Optional)

I just happened to have some ground walnut from yesterday’s Veggie Bowls.  Yesterday, I ground them up and dusted them over our food and I had some leftovers in my Bullet container so I just used all of the leftovers in this smoothie.

My tot loved it! Drank it all up and probably had a more nutritional dinner than we did.

Kid-Friendly Green Smoothie

  • 1/2 Cup Spinach
  • 1/4 Cup Watercress
  • 1/2 Banana
  • 2-3 Strawberries
  • 1/4 Avocado
  • Ice (use ice if fruit is not frozen)
  • Water

  1. Wash spinach, watercress and strawberries.
  2. Add a splash of water.
  3. Combine all ingredients up and blend until smooth. Depending on the consistency, add a little more water to thin it out.
